The great thing about tacos is that you can easily make them with only a few ingredients. Plus you can make them as healthy as you want!
You can go for traditional Mexican flavors, or go in a completely different direction and take flavorful ideas from tropical elements like pineapples and mangoes. Pro tip: You can use fresh pineapples and mangoes or get the canned versions, as the flavor, as well as the nutritional value is pretty much the same.
The tropical fruits in this recipe add a refreshing touch during the warm summer heat. While pineapples and mangoes do contain sugar, they’re also packed with dietary fibers and lots of protein, vitamins and minerals.
This healthy recipe also includes spicy seasonings like chili powder and cayenne pepper that will add a little extra kick to your tacos. And best of all, they’re so easy to make, they’re virtually hassle-free, which makes them the ideal dish after a busy day at work.

- 1 tablespoon olive oil
- 1 cup white onion
- 1/2 block firm tofu; diced
- 1 tablespoon garlic; minced
- 2 tablespoons salsa
- 2 tablespoons lime juice
- 1 tablespoon chili powder
- 1 teaspoon cayenne
- 2 teaspoons paprika
- 1 teaspoon oregano
- 2 teaspoons cumin
- 2 tablespoons cilantro
- 1/4 cup pineapple chunks
- 1/4 cup mango chunks
- Heat pan to medium heat then add in the olive oil. After oil heats, add white onion for 3 minutes to sweat.
- Add crumbled firm tofu, let cook for 4 minutes.
- Add garlic. Cook on low to medium for 4 minutes.
- Add in chili powder, cayenne, paprika, oregano, cumin, and cilantro.
- Top with lime juice and salsa tossed together. Saute for another 2 minutes.
- Add tofu mix to tortilla. Top with pineapple, mango, avocado, salsa, and fresh cilantro.
